I'm not sure if you've looked into this but I had a fun time just now looking into Buddhist meditation performed by non Buddhists to see the effects it has on happiness. König, R., & Malinowski, P. (2004) Does Buddhist meditation increase happiness?. (I would only use this as background reading as it's not a scholarly or peer reviewed article, if anything it was a fun and fascinating read). This one was also a fascinating read Fronsdal, G. (1998). Insight meditation in the United States: Life, liberty, and the pursuit of happiness. The faces of Buddhism in America, 163-82. Malinowski, P. (2008). Mindfulness as psychological dimension: concepts and applications. The Irish Journal of Psychology, 29(1-2), 155-166.
This article Shapiro, S. L., Schwartz, G. E., & Santerre, C. (2002). Meditation and positive psychology. Handbook of positive psychology, 2, 632-645. looks at the effect meditation has on happiness and positive affect which would be a helpful focus for you chapter.
As meditation is often associated with spirituality and religion, it would be beneficial to look at their effect on happiness Snoep, L. (2008). Religiousness and happiness in three nations: A research note. Journal of Happiness Studies, 9(2), 207-211. Of course this would go along with Buddhism.
