Have a look at Technical Writing here at Wikiversity. It's evolving but should be relatively complete in another month. What about using this for your course content?
I'm now teaching the course using the wiki as a resource. I could get some classroom video made...just consumer grade cameras, and we'd need a place to upload the files...but it's a start.
